Course InfoClass Number: 2463 Politics shapes what appears on our plates as well as where we set our table. It all has a history. In America with its confounding combination of engorging bounty and tragic poverty, food represents a special nexus of the political and the personal. This course looks at the history and politics of eating, producing, and consuming food in the United States. Course topics include how food shaped both external and internal migrations to the United States; how American foreign policy from the Cold War to today helps us understand global food and refugee crises; the history and politics of food aid, and the transformation of food consumption in modern America.
