Whole Wheat Quick Bread

2 cups whole wheat flour

1 tsp. baking soda

2 tsp. baking powder

1 tsp. salt

Sift the above into a bowl.

Then add:

1/2 cup soy flour

 6 T. corn oil

1 1/2 cups sour milk 

1/2 cup molasses (or honey) 

1/4 cup dry milk

Stir well.  Spoon into buttered 9 x 5 loaf pan.

Let stand 20 minutes.  

Heat oven to 350.

Bake about 60 minutes or until bread is nicely browned and tests done with a toothpick.

A lovely bread, especially for breakfast. 

I usually add at least 1/2 cup raisins.

I made this the first time I came to Carol’s house for dinner, a week after we met.  She was really impressed that I not only could cook, but that I had made a loaf of bread.   We’ve been enjoying it for 25 years!
