Napa Cabbage Salad

Toss and chill:

1 head of Napa or Chinese cabbage

1 head of chopped broccoli florets

chopped scallions (2-3 bunches); I omit this and add onion powder

Saute until golden and cool (watch carefully as it begins to brown):

6 T margarine

2 packets Ramen noodles, broken into small pieces

1/2 small jar sesame seeds

1 small bag slivered almonds

Mix well in shaker:

1/4 cup olive oil

1/4 cup sugar

soy sauce, to taste (more than a few shakes), I probably use 2-3 T

Add cooled mixture to chilled mixture and toss with dressing.

Toss and hour or two before serving, toss again before serving.  It will condense.

This is a favorite.  Napa cabbage is often a very large head and I have asked grocery store vegetable department people to cut it in half and wrap it for sale.  It sells by the pound and they’ll gladly do this so you don’t have to eat it for a week, but it’s also a great dish to share.
