Chocolate Meringue Cookies
3 large egg whites
1/4 tsp cream of tartar
1/4 tsp salt
1 c. sugar
3 Tbsp unsweetened cocoa
3 Tbsp mini chocolate chips (you can add more, and use regular-sized chips)
Beat egg whites, cream of tartar and salt at high speed until soft peaks form. Add sugar 1 Tbsp at a time, until stiff peaks form. Sift cocoa over egg white mixture and fold in. Fold in mini chips.
Cover a baking sheet with parchment paper and secure with masking tape. Drop batter by 1T on prepared baking sheet.
Bake at 300 for 40 minutes or until crisp. Cool on pan on wire rack. Repeat with remaining batter, reusing parchment paper. Store in airtight container. Yield: 4 dozen.
