Dear members and friends of Slow Food Philadelphia,

Farmers would love it if chefs would buy the entire animal (as opposed to the same old “prime cuts”) and put all the various parts to great culinary use. Fergus Henderson, the English star chef, certainly agrees with the farmers’ wish. His delightful The Whole Beast. Nose to Tail Eating makes for delectable reading. In David Ansill, owner of Pif (1009 S. 8th Street) and the newly opened and delicious Ansill (Bainbridge and 3rd Street), Philadelphia has a chef that shares this philosophy and so it is with great excitement that Slow Philadelphia invites its most adventurous members for just such a “Head to Toe” dinner at Pif on Sunday, March 26, 6:30 p.m. I want to thank Tom Sherman who organized this fabulous menu with the chefs of Pif, Dave Kane and David. Other Slow Food events in the coming weeks include a talk about the farm Cooperative Kallari in the Ecuadorian Amazon (Slow Food supports their efforts to produce chocolate), a Pasta evening at Penne (with Roberta Adamo), Cheese and Chocolate at DiBruno Brothers, a spring farm dinner at restaurant Alba, and a members barbecue at Yards brewery.
